Peanut is the best. Allergies?? Safflower is high temp.
If you are willing to spend the money, go to a restaurant supply store and buy oil used for deep frying. I've researched deep frying oils and have discovered that rice oil is the healthiest deep frying oil available. I think it costs anywhere between $35 and $45 for a 35 pound jug of rice oil.

Canola oil or another vegetable oil would be good.





I wouldn't recommend peanut oil - it's high in fat, and many people are allergic to peanuts.
