Any oil will burn at high heat. Low constant shouldn't be a problem unless you leave it for too long. (many hours).
Olive oil has a smoke point of about 410 degrees.
All types of olive oil provide monounsaturated fat, but ';extra-virgin'; or ';virgin'; olive oils are the least processed forms. As a result, they contain the highest levels of polyphenols, a powerful antioxidant. Excess heat destroys the antioxidant.
If cooking with high heat consider grape seed oil instead.
Keep in mind that heat destroys the nutrients in all foods. Eating raw veggies has more nutrients than cooked. So it's not just the olive oil.Does extra virgin olive oil or plain olive oil burn in the oven?
If I remember correctly... olive oils have a lower smoke point than say, vegetable oil.

They do have different smoke temperatures.
